I would think that the whole "interest" thing would apply just to large content sites or for creating your own product like a How To Book or other info. A lot of affiliates do not build large content sites on the niches they promote, so it would not matter if they were interested in it or not. Even if you do find something you are interested in, all the site building and promoting is still tedious anyways and will take most of the time. I just enter affiliate world novermer last year. Consider doing well. My site is more a content site. I do use PPC but I pay no more then 30 cents and target some rare search term since the common term can exceed $10/click. I will die of heart attact if you ask me to pay $10/click. I haven't get a single check for my revenue so far, the earliest I could get would be April. Now I am not afraid on I can't make money but my biggest source of revenue come from a merchant rather than a 3rd party...

You have a couple of things to consider here: 1) Increasing number of visitors means increased number of potential customers 2) Perhaps more importantly is to make sure you lever each visitor as much as possible. For example if you have 2000 uv per day and they never buy anything, then increasing traffic to 4000 uv per day might not help much. Nothing wrong with them from what I can tell. The problem is with the general vagueness of the term "doorway pages" that's come about over the years, and the checkered history of how these pages have been used. Sitemaps apart... the original idea of a doorway page was a well-focussed optimized page that linked into a site and attracted search.
